Preparation

Dal petto di pollo ritagliare tante striscioline e insaporirle per circa
30 minuti in un trito d’erbe aromatiche
Nel frattempo in una bacinella unire le due farine e diluire
gradatamente con il vino bianco e la birra; così da ottenere un composto
liscio e morbido
Regolare di sale e pepe, incorporare delicatamente l’albume montato a

Infarinare le striscioline di pollo, immergerle nella pastella poco
alla volta
Tuffarle nell’olio bollente 180°C per 5/6 minuti
Il bianco di polo così cotto dovrà risultare croccante e dorato
Preparazione del
piatto
Disporre al centro del piatto il timballo di patate, addossare i
filetti di pollo fritti e coprire con una julienne di zucchine fritti.
Cordone di salsa

Intiepidire un bicchiere di champagne, aggiungere un tuorlo d’uovo,
sale e pepe bianco fiocchetti di burro morbido ed emulsionare.
Suprema
d’Anatra cotta in padella allo scalogno
e
patata tornita alle verdure
Ingredienti
1000 g. Suprema
d’anatra
500 g. di scalogno
200 g. di burro
½ l di vino
rosso (prefer. barolo)
1 bicch.
d’olio extr.
½ l di fondo
bruno
10 patate tutte
della stessa misura
200 g. asparagi
200 g. pomcassè
200 g. zucca gialla
(eventualmente mais)
200 g. di fagioli
neri (messicani)
Preparazione
Ritagliare la suprema d’anatra
Cuocere in saltiere con olio e burro
Aggiungere lo scalogno e continuare la cottura, non più di 50 ° al
cuore
A cottura togliere i medaglioni e tenere in caldo
Sfumare con il vino rosso, aggiungere il fondo bruno cuocere per
alcuni minuti
Passare al mixer e montare con il burro
Le patate vanno pelate e tornite, cotte al vapore, tagliate a metà,
scavate insaporite con burro fuso e erbe aromatiche, farcire con la
dadolata di verdure
Preparazione del
