dumplings whit pumpkin season whit drawn butter and hazel
Ingredient(6 people):
400 g. white flower
150 g. sweet Casera sliced
100 g. pumpkin
100 g. stale breadcrumb soften in the milk
100 g. draw butter
50 g. milk
3 eggs
1 spoon of hazel mince
salt and pepper t.t.
Preparation:
In the tureen put the soften breadcrumb, the flower, the eggs, the
pulp pumpkin crush and filtered, in case dilute whit little milk will
have to result a compounded homogenous and soft. Halp self whit a
special hand tool for dumplings cook it in the abound whit salt water
for some minutes, drain it whit the cookware pierced and pan-frying whit
the butter drawn and aromatic it whit the hazel.
Finish white subtle sliced of Casera and gratinated in the oven.

Pumpkin
cream au gratin, aged Bitto and homemade crouton breade
Ingredients(6 people):
200 g. pumpkins
200 g.potatoes
180 g. homemade bread
100 g. Bitto
50 g. celery
50 g. leek
50 g. cream
1 spoon of chive herb
1 yolk egg
Oil, t.t.
Vegetable soup t.t
Salt and pepper t.t.
Preparation:
- In a casserole let fade with little oil, leek mince, celery,
pumpkin and potatoes cut into cubes
- Pour them in the vegetable soup
- Complete cooking sieving with a moulinette, the cream must result
dense and velvety
- Enrich with cream of yolk egg, dress with salt ,pepper and chive
herb
- Pour in the bowl, lay down on the homemade bread, a Bitto slice
and heat up in the oven for little time

Roll
turkey with stuffed yellow pumpkin and small pulses
Ingredient(6 people):
500 g. turkey rump
200 g. pumpkin
50 g. cream
50 g. courgette
50 g. red pepper
2 asparagus
1 spoon of chive herb
1 spoon of marjoram
Preparation:
- Hammer out the turkey rump and stuff with : in the Mixer put
scrap of turkey - about 100 gr. - add cook pumpkin stewed, the cream,
salt and pepper so to obtain a smooth and homogenous stuffing, enrich it
with minced courgettes, red pepper, asparagus, chive herb, marjoram,
roll up and wrap in the aluminium layer oily and salted. Filter it in a
hot pan for 4/5 minutes, finish the cooking in the preheat oven at 190°
for about 10 minutes.
- Remove the roll from the aluminium layer and slice it obliquely,
sort it on the single dish surrounded with courgettes and carrots
sticks.

Pumpking
and amaretti soufflé
Ingredient(6 people):
250 g. butter
250 g. white flour
250 g. sugar
100 g. pumpkin
1 l. milk
12 eggs
5 “Saronno amaretti”
vanilla perfum, t.t.
Preparazione:
- Let blend the butter, pour it the flour, mix and cook for
some minutes.
- Boil the milk with the vanilla, pour the sugar, confuse slowly and
match in the mix of butter and flour using a wooden spoon and cook it
for some minutes.
- Remove it from the fire, unite the pumpkin filtered and Saronno
amaretti, totally crumbled, absorb the yolk eggs one by one and at the
end in the white eggs, whipped up gently
- Grease the suitable stencil for soufflé, dust with sugar, fill up
to ¾ with the obtained compound.
- Put the stencil in a double saucepan (about 70°) for 10 minutes.
